Tandoori Chicken

Tandoori Chicken is a chicken dish that originated in the Punjab region of the Indian subcontinent. Chicken is marinated in yogurt and seasoned with tandoori masala.While some consider the origin of Tandoori chicken akin to the tandoor or clay ovens used by others, Tandoor cooked chicken actually dates back to the Mughal peroid. Here’s a great easy recipe from you tube video.

Ingredients Required

Chicken Drumsticks (6) 1 pound
Yougurt 1 1/2 cups well beaten
Ginger Paste 1 Tbsp
Garlic Paste 1 Tbsp
Green Chilies to taste finely chopped
Red Chilie powder 1/4 Tbsp
Paprika 1/2 Tsp
Tandoori Masala 1 Tbsp ( Available at most India stores )
Coriander powder 1 Tsp
Salt to taste
Lemon Juice 1 Tbsp

The “Burger of the Gods”

Following up on the previous “how to grill a burger” entry, we now present you with a fantastic burger recipe from Alton Brown, host of the Food Network’s “Good Eats”.

This recipe is fairly simple, using a sparse list of ingredients:

8 ounces chuck, trimmed, cut into 1 1/2-inch cubes
8 ounces sirloin, trimmed, cut into 1 1/2-inch cubes
1/2 teaspoon kosher salt

The salt is used to accent the natural flavors of the beef.  In addition, Mr. Brown does not suggest cooking these burgers on the grill.

In separate batches, pulse the chuck and the sirloin in a food processor 10 times. Combine the chuck, sirloin, and kosher salt in a large bowl. Form the meat into 5-ounce patties.

Heat a cast iron skillet or griddle over medium-high heat for 2 to 3 minutes.

Place the hamburger patties in the pan. For medium-rare burgers, cook the patties for 4 minutes on each side. For medium burgers, cook the patties for 5 minutes on each side. Flip the burgers only once during cooking.

This reciple is especially helpful for days when you don’t want to grill outside, days with bad weather, or for those who don’t own a grill.

How to grill a burger

This video from HowCast shows the basic steps involved in grilling a fantastic burger. Three informative tips from this video are:

  1. Don’t handle the beef any more than necessary – excessive shaping will ruin the texture
  2. Refrigerate the beef before grilling – the meat should be cold when it goes on the grill
  3. Place a small indentation in the center of the patty – this will prevent bulging

In addition to the tips in the video, I would suggest that you add seasonings (including Worcestshire sauce) to the beef and mix them in prior to shaping the patties
